Ingredients & Method

  • 2-3 chicken frames
  • 1 large onion
  • 8-10 carrots - thinly sliced
  • 5 stalks of celery
  • 4 garlic cloves
  • 1 large tomato
  • 1 potato
  • 1 zucchini - sliced
  • 1 punnet of dill
  • Salt and pepper to taste.

Instructions:

Fill a large pot, 3/4’s full with water and bring to a boil. Place the chicken inside a soup bag and put inside the pot. Allow the water to come to a boil again and skim off any ‘foam’ that comes to the top. Once the water is bubbling and clear, add the vegetables. Next add the dill into a soup bag and place into the soup. Add salt and pepper to taste. Let the soup come to the boil again and let boil for 10 mins, then reduce heat, cover, and let soup simmer for a couple of hours. The longer you leave it on the more flavour it will get.
