Ingredients & Method

  • 1 tsp of oil
  • 4-6 carrots peeled and sliced
  • 1 large sweet potatoe cubes
  • 2-3 tsp of honey or 4 Tbs of sugar
  • 1/4 cup of orange juice
  • Dash of salt
  • 2 slices of pineapple cut into pieces or from a can
  • 1/2 tsp of cinnamon
  • 1/2 tsp of nutmeg ( optional)
  • 1/2 cup of pitted prunes ( optional )

Method

Coat bottom of 2 quart pan with oil and heat .add carrots and cook on low heat for 10-15 min add sweet potato, honey , orange juice and a dash of salt , ( optional pitted prunes ) and cook over a low flame for 30 min . Add pineapple and cinnamon and ( optional nutmeg ) after 5 minutes and then serve warm .
