SALMON IN A POMEGRANATE SAUCE

Ingredients & Method

Ingredients

· 1 whole side salmon, or 8 entre size portions

· 1 large red onion, sliced very thin

· ¼ cup olive oil

· 1 cup unsweetened pomegranate juice

· ¼ cup apple cider vinegar

· 2 tablespoons tomato paste

· Salt and pepper to taste

Pomegranate seeds, fresh parsley (Optional for garnish)

 

 

Instructions

Preheat the oven to 210°F.

Place the salmon in a pan. Scatter the onions on top and on the sides of the fish. Mix the oil, juice, vinegar, tomato paste, salt, pepper in a bowl, and pour over the fish. Cook approx 20 minutes.
