Rosh Hashana sweet salad

Ingredients & Method

  • Mixed lettuce leaves
  • Broccoli florets
  • Snow peas halved
  • Chopped dates
  • Sliced apples
  • Pomegranate seeds

Dressing :

  • ¼ c mayo
  • ¼ c maple syrup
  • ¼ c oil
  • 2 Tb sugar
  • 3 Tb vinegar

Rosh Hashana quinoa salad:

  • Rocket leaves
  • Cooked quinoa
  • Roasted / steamed beetroot cubed
  • Roasted sweet potato cubed
  • Halved cherry tomatoes
  • Blanched greenbeans cut into thirds
  • Sunflower seeds / pumpkin seeds

Dressing:

  • 1/2 cup basil
  • 1/3 cup olive oil
  • 3 tbsp vinegar
  • 1 tsp honey
  • 1 tbsp mustard
  • 1 tsp brown sugar
  • 1 clove garlic
  • 1 tsp salt

Blend dressing ingredients together, drizzle over salad and mix.
