HONEY CAKE

Ingredients
3½ cups plain flour
1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup canolla oil
1 cup honey, divided (3/4 cup and 1/4 cup)
1½ cups sugar
½ cup brown sugar
3 room temperature eggs
1 teaspoon vanilla essence
1 cup brewed coffee or strong tea
½ cup orange juice
Instructions
Preheat oven to 180 and grease regular baking tray (preferably with relatively high sides)
In a large mixing bowl, sift together the flour, baking powder, and baking soda. Add salt.
In another bowl mix together the oil and sugar. Whisk in 3/4 cup of the honey, vanilla, eggs (one by one), and orange juice.
Mix liquid mix into dry mix until all ingredients are combined and no lumps remain. Whisk in 1 cup of coffee (still warm).
Pour the batter into the prepared pan. It should only be halfway full
Drizzle the remaining 1/4 cup of honey over the batter.
Bake in the preheated oven until the cake is set all the way through and feels springy to the touch (30 to 60 minutes, depending on the size of your baking dishes). A toothpick inserted into the centre should come out clean.
You can cut this recipe down.
To make one 9-by-5-inch loaf or 12 cupcakes use:
1 cup plus 2 tablespoons flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup vegetable oil
1/3 cup honey (save about 1 1/2 tablespoons for drizzling over the batter)
1/2 cup granulated sugar
2 1/2 tablespoons brown sugar
1 large egg
1/2 teaspoon vanilla
1/3 cup coffee or tea
2 1/2 tablespoons orange juice.
